Apples as Big as My Head!
Have you ever seen an apple this big? And yes, I think it really is as big as my head, or at least the brain that live beneath my big skull. That’s a bread & butter dish it’s sitting on! And I’m aware you’re not looking at a real apple leaf. It didn’t come with a leaf so I snipped a mint leaf from my hydroponic herb garden. Not perfect, but this big-as-my-brain apple needed something green on top.

See, real or not it looks weird without a leaf and caramel coming out of the top.

The amount of chocolate and caramel is overwhelming, especially with brian-sized apples, but when sliced open, the light, fresh snap of a juicy Honey Crisp apple with it’s sweet-tart flavor is perfect under the cloyingly sweet exterior.
Now, if you’re going to go through the effort of making your own caramel apples — make that Chocolate-Dipped Caramel Apples — please take the time to make the caramel from scratch. Yes, it’s time consuming and takes focus, but the satisfaction of creating a confection like this by your own hand rather than by unwrapping all those individual caramels and melting them is so much more gratifying.

I tried something different this time using coconut cream rather than heavy cream, but the flavor I was hoping for didn’t come through. I tasted the caramel before coating the apples with dark chocolate and for some reason it was void of the tropical, nutty flavor I was hoping for.
Oh well, I’m heading out for Thai food at a restaurant I’m told is THE BEST in the area and know I will have my fill of coconut there. I’m excited. I’m told the dining experience is unparalleled in the Thai world around these parts. I wonder if I can convince my friend that taking photos of the meal is not strange. Really. Seriously. I promise. We’ll see. I have a feeling I’m not going to win this one.
