On a trip to the market a few days ago I eyed a selection of packaged corned beef in the meat case.  It looked different from the corned beef I remember my mom cooking when I was growing up.  It lacked any of the seasonings I would see swimming in the briny packages I was familiar with.  I think it may have been this reason that had me throwing a small package into my cart that afternoon.  I figured I could easily freeze what I didn’t eat in a couple of meals during the week and less than $5.00, I was going to get a minimum of 7 meals out of it.  Score!  By contrast, in a couple of weeks I’m going to pick up a brisket for Passover and it’s guaranteed to be much more than $4.63, but that’s a later post.

I had a few slices of the beef with deli mustard, sliced pickles and chips for a late dinner one night and yesterday I woke up wanting to make corned beef hash.  I seem to recall that along with his champion grilling skills, my father being the corned beef hash master so I’d had it when I was young, I’d just never made it before.  When looking over the ingredients in my fridge I came up with something that would be a total departure from the classic dish.

I keep a stack of corn tortillas in my fridge.  I’d roasted vegetables the night before and knew it would make a delicious addition to the hash.  And the packages of cheese taking up space in the deli drawer in the fridge were calling out to me.  The result — Tex-Mex style Farmstand Corned Beef Hash.

I know, it’s not the corned beef hash you remember, but is there any reason not to try it?  If you had leftover corned beef in your house today, what kind of hash would you put together?

I like that you already have solved my delimina for what to do with left over corned beef. Your stir fry looks very good. My favorite use of left over potato salad is Oliviet, Russian Style potato salad. Nice video! You make cooking look so nice and simple!

Thanks Stephanie! I’m developing a bit of a video-making habit. Just when you think blogging is a time suck, video creation gets under your skin. Oiy vey! I need to find a way to create an income so I can do this all the live-long day.
